Apricot Bars

Ingredients
Bar

• 3/4 olio (crisco)
• 1 c sugar
• 1/2 c milk
• 1 egg, slightly beeten
• 1 box gram crackers
• 1 c dried apricots, chopped/minced
• 1/2 tsp vanilla

Glaze

• 3 TBS butter, melted
• 2 c powder sugar
• 2 TBS lemon juice, fresh (or more)

Method

1. Cook olio, sugar, milk, and egg stirring every 5 min.
2. Add 1 c crushed gram crackers, apricots, and vanilla.
3. Line a 9" x 13" pan with whole gram crackers.
4. Pour cooked mixture over the crackers and top with another layer of whole gram crackers. 
5. For the glaze, mix the butter, powder sugar, and lemon juice. Add more lemon juice to thin as needed.
6. Cover the gram crackers with the glaze. Garnish with lemon zest, optional. 
7. Let the setup or refrigerate for 1 hour to set. Glaze should harden.
